Tomatoes are just one of many reasons I love summer. Our heirlooms are struggling against the blight for the second year in a row, but we’ve manage to harvest deliciousness despite the poor looking plants.
Sometimes I don't even need to add the mozzarella or fruity olive oil or balsamic vinegar. Just a sprinkling of sea salt and julienned basil is enough, but the oil and vinegar makes a juice that tastes like gazpacho. So flavorsome:)
