I had a pound of ground pork into which I added chopped garlic, chopped scallions, chopped cilantro, lemongrass paste, fish sauce, soy sauce, and sugar. I rolled and then flattened them into tiny patties.
The last time I cooked Vietnamese meatballs, they stuck to the pan I was frying them in, and so this time, I made sure to pour an ample amount of cooking oil. I also made a dipping sauce of lime juice, fish sauce, sugar and Thai chilies.
I had at the ready, chopped cilantro, chopped Thai basil, chopped Italian basil, bean sprouts, and sliced cucumbers, which I piled into a bowl of steamed rice vermicelli.
Dinner is done...and was delicious and nutritious.
