Quarantine Gardening & Cooking & Corresponding: Pico de Gallo & DIY Carnitas Burritos

I have been buying fresh salsa, waiting for our tomato harvest. But finally we’re getting more tomatoes we can consume, and I had jalapeños, cilantro and red onion on hand to make the first tasty pico de Gallo of the season.

Pico de Gallo made just in time for dinner, where I fried carnitas, grated Monterey Jack, made guacamole, reheated refried beans, and took out flour tortillas because only minutes before did I discover that I had no corn tortillas--hence burritos instead of tacos.

Not pictured is the hubs slightly burned burrito and my last-minute decision to make myself a slightly burned quesadilla instead.
